During her studies, Amita Jahangiri studied the hydrophilization of natural colorant, bixin, through an enzymatic reaction. Bixin is known as the main color component of annatto seeds with orange to red color. Bixin contains an unsaturated, conjugated chromophore responsible for their lipophilic characteristic. The lipophilic inherent of bixin limits its applications in water-based food formulations. Amita studied how the hydrophilization of bixin can improve its aqueous solubility. Moreover, heat and light stability of the modified bixin was investigated in model systems and yoghurt.

The research findings indicate that a modification of the natural colorant bixin can change its physicochemical properties. The obtained knowledge could also provide useful information for the food industry.
