The milk fat globule membrane - new methods for isolation of an ingredient for infant formula

During his studies, Steffen researched the impact of processing on the milk fat globule membrane (MFGM) in bovine milk to develop a novel isolation method. MFGM has many beneficial functions, including supporting neural development. Therefore, it is interesting as an ingredient in infant formulas. However, milk processing – including heat treatment and homogenization – changes the composition of MFGM. Steffen developed a more gentle isolation method based on microfiltration of raw milk with minimal changes to MFGM.

The new findings contribute with novel insight about MFGM, including a scalable production method that enables full-scale production and possibly addition to infant formula.

The PhD degree was completed at the Department of Food Science, Science and Technology, Aarhus University.
